In my family, our Spanish roots are very strong. In fact, my grandpa was from Madrid, so I grew up enjoying the flavors of the Spanish kitchen. My favorite was chorizo de cantimpalo, known as Spanish chorizo. It tastes delicious in a number of dishes, such as potato casserole with chorizo, inspired by the traditional Spanish tortilla, but without the egg.

Ingredients

  • 2 cups boiling water
  • 1 tablespoon butter
  • 2/3 cup milk
  • 1 package Betty Crocker™ Roasted Garlic Potatoes
  • 2 servings Spanish-style chorizo
  • 1 teaspoon fresh dill

Directions

    Preheat the oven according to the instructions on the package of Betty Crocker™ Roasted Garlic Potatoes.

    Combine the boiling water and butter in a bowl. Stir, and when the butter has melted, add the milk and the package of seasoning that comes in the package of Betty Crocker™ Roasted Garlic Potatoes. Whisk until fully incorporated.

    Finely chop 1 serving of chorizo and add it to the butter mix along with the Betty Crocker™ potatoes.

    Pour the preparation in a casserole dish and bake for 25 minutes until the potatoes are tender. Cut the second serving of chorizo butterfly-style and fry. Serve alongside the potato casserole and garnish with fresh dill immediately before serving.
