Puerto Rican almojábanas are fritters made with rice flour. It's typically found in the northeastern and central regions of the island. This recipe has a sweet version and a salty one. The sweet type is served drenched in honey or brown sugar. The salty version has parmesan cheese or queso fresco. Personally, I prefer the sweet kind with a cup of coffee.

Ingredients

  • 1 1/2 cups rice flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 eggs
  • 3/4 cup milk
  • 1 teaspoon baking powder
  • Vegetable oil for frying
  • 2 tablespoons melted butter

Directions

    Mix the two sifted flours in a medium bowl with the baking powder and salt.

    Mix the dry ingredients with the milk, butter and whipped eggs. Let sit for a few minutes.

    Heat the oil and fry the mixture by the tablespoon. Fry until browned on both sides. Get rid of the excess oil with paper towels. Serve hot sprinkled with brown sugar and drenched in honey.

    If you prefer the salty version, just skip the sugar and add 2 to 3 tablespoons of parmesan cheese or grated queso fresco.
