This Puerto Rican cabbage salad is a delicious combination of cabbage, carrot, avocado and lemon juice. It’s a delicious option for those who are tired of preparing the same old cabbage salad. Ingredients

  • 3 cups green cabbage, cut into thin strips
  • 1 1/2 cups grated carrot
  • 3 Haas avocados, cut into cubes
  • 2 tablespoons olive oil
  • 4 lemons

Directions

    In a medium bowl, mix together the cabbage, carrots and avocado.

    Add the olive oil and the juice of 4 lemons. Season with salt and black pepper, to taste.

    Cover with plastic wrap and refrigerate for at least 30 minutes before serving. Buen provecho!
