Pumpkin Spiced Café Con Leche

Many people have never tried instant coffee. All they know about it is that it was that warm drink their grandmothers used to prepare, like mine did every time we visited her in Mexico. She would add a little piece of cinnamon stick to flavor the milk before adding the coffee granules and sugar. For this recipe, I added some pumpkin pie spice. It’s a warm dessert in a cup that your friends and family will enjoy at next your holiday party.

Ingredients

  • 2 cups whole milk or milk of your choice
  • 2 cups half and half
  • 2 1/2 tablespoons instant coffee granules, more to taste
  • 1/8 cup sugar, more to taste
  • 1 1/4 teaspoons of pumpkin pie spice
  • 4 ginger snap cookies
  • 1 can whipped cream
  • 1/3 teaspoon ground cinnamon
  • 4 tablespoons dulce de leche

Directions

    Combine the milk and half & half in a saucepan and heat to medium temperature.

    When the milk starts to form bubbles around the edge of the pan, whisk in the coffee, sugar and pumpkin pie spice. Whisk for one minute, taste for sugar and spices and add if needed.

    Reduce heat slightly and cook for another 2 minutes. Transfer the ginger snap cookies to a plastic bag. Using a rolling pin pound out to crush finely; set aside.

    Add the dulce de leche to a small microwave safe dish. Heat in microwave for 30 to 35 seconds.

    Pour the coffee into 4 cups, eight ounces in each. Garnish each with whipped cream, crushed ginger snap cookies, cinnamon and dulce de leche. Serve right away.

    If you want to prepare this recipe for a large party, make it a day before. Follow the directions to cook coffee and let cool on stovetop. Once cooled, store in an airtight container and refrigerate. Reheat at a low temperature until hot, garnish as directed.
