I love making these quinoa, oatmeal, and raisin bars frequently. But, I’m not the only one who enjoys them: I send some in my daughter’s lunchbox and the rest of the family has them with coffee after dinner. I love using different types of dried fruit, but my favorites are cherries, red berries, and raisins. These taste great and are super portable—perfect for on the go snacking.

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup honey
  • 3 tablespoons quinoa seeds
  • 2 cups oatmeal
  • 1 cup raisins

Directions

    Preheat the oven to 350° F.
  • 2
    Warm up the oil and the honey in a pot over low heat.
  • 3
    Mix the rest of the ingredients in a separate bowl.

    Line the bottom of a baking dish with parchment paper and pour in the mix of chia seeds, oatmeal, and raisins.

    Pour the hot oil and honey into the baking dish.
  • 6
    Press all the ingredients and bake for 20 minutes. Let it cool down and cut with a sharp knife.

    Try using different dried fruits like blueberries, pineapple, coconut or cherries. They’re all delicious and amazing.
