Rajas Tacos with Cheese

To me, some of the best tasting tacos are meatless. With fresh vegetables and the right seasoning, taco night can become a vegetarian affair your family will enjoy. Rajas, or poblano chile strips with your favorite cheese, pair perfectly wrapped in a warm corn tortilla. Prepare these tasty tacos for a large crowd or a light lunch just for you. However you decide to serve them, you'll sure enjoy them to the last bite.

Ingredients

  • 6 poblano chiles, rinsed
  • 1 cup Cotija cheese, cubed
  • 1/2 onion, sliced
  • 1 Roma tomato, chopped
  • 1 tablespoon olive oil
  • 12 corn tortillas

Directions

    Set oven to broiler.
  • 2
    On a foil covered baking sheet, place poblano chiles and broil for 30 minutes or until skins are charred.

    Remove from oven and place chiles in a plastic bag for 10 minutes. Remove chiles from plastic bag and peel with hands under running water. Slice in strips.

    Heat oil in a medium skillet over medium heat. Add chile strips, onion, and tomatoes. Cook for 5 minutes or until onions are tender. Remove from heat and add cheese cubes into chile strip mix and stir. Heat tortillas and spoon 3 tablespoons of chile strips on warm tortilla.

    Serve and enjoy!
