Blue cheese, Parmesan cheese and pasta try this wonderful main dish for any occasion.

Ingredients

  • 1 tablespoon butter
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/4 cup white wine
  • 1 pint (2 cups) whipping cream
  • 3/4 cup crumbled blue cheese (Roquefort)
  • 1 1/4 cups shredded Parmesan cheese (5 oz)
  • 1/4 teaspoon ground nutmeg
  • Salt, if desired
  • Freshly ground pepper, if desired
  • 1 box (16 oz) fettuccine

Directions

    In 2-quart saucepan, melt butter over medium-high heat. Add shallot; cook 1 to 2 minutes or until translucent. Stir in garlic; cook 30 to 60 seconds.

    Add wine. Stir in cream, both cheeses, nutmeg, salt and pepper. Heat sauce to a simmer (do not boil). Reduce heat to medium; simmer 15 to 20 minutes, stirring occasionally, until sauce reduces to three-fourths original amount.

    While sauce is simmering, cook and drain fettuccine as directed on box.
  • 4
    Serve sauce over pasta. If desired, top with additional Parmesan and blue cheese.
