Scallop Tacos in Creamy Chipotle Sauce

The word "scallop" is synonymous with "shell" in Old French because that's where they come from: seashells. There are many species of scallop around the world, so there's a lot for us to try! When prepared correctly, they're tender and add a lovely taste and flavor to a wide variety of dishes: especially tacos! I'm used to making a chipotle cream sauce and grilling up my scallops on the BBQ. They're very easy to make and taste insanely good! Scallop tacos are also popular and very much in demand around my house during the summer months. My fiancé would probably eat them 3 times a week if he had his way. Prepare these tacos for your family this summer and you'll see how much they'll enjoy them!

Ingredients

  • 1 lb scallops
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons crema Mexicana
  • 2 tablespoons adobo sauce (from canned chipotle peppers)
  • 6 corn tortillas

Directions

    Pre-heat the grill over a high flame.

    Pour 1 teaspoon of olive oil on the grill to keep the scallops from sticking.

    In a small bowl, season the scallops with salt and pepper to taste.

    Place the scallops on the grill and cook about 4 minutes on each side (depending on how thick they are).

    In the meantime, combine the crema and the adobo sauce in a bowl. Set aside.

    Heat the tortillas over an open flame.
  • 7
    Fill each tortilla with a few scallops and drizzle with the chipotle sauce.

    Don't overcook the scallops. Eat them as soon as you take them off the grill, while they're tender.
