Turn on the grill and treat your guests to these delicious shrimp kabobs in tamarind sauce. Savor the irresistible combination of coconut milk, shrimp and tamarind. This time I decided to serve the shrimp on kabobs, but another great way to serve them is with rice drizzled in the delicious sauce. How do you prefer them? I still can’t decide.

Ingredients

  • 10 oz shrimp
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1 cup tamarind juice
  • 2 tablespoons honey
  • 1/2 cup coconut milk

Directions

    Clean shrimp, place them on kabob skewers and add lemon juice.

    Season with salt and pepper.

    Preheat the grill and cook them thoroughly. Don’t overcook them so they stay juicy.

    In a pot on low heat, heat up the tamarind juice, honey and coconut milk.
  • 5
    Remove from heat when the sauce thickens.
  • 6
    Cover shrimp in the sauce and serve warm.

    For a little bit of heat, add a dash of Tabasco or chopped jalapeños to the sauce.
