If you’re gluten free, then this is the perfect dish for you. You can prepare this dish and serve it with the sauce included in the recipe, or you can use any other sauce you like. Ingredients

  • 1 spaghetti squash, weighing about 3 pounds
  • 3 tablespoons olive oil, separate
  • 1/2 small onion, diced
  • 1 chopped garlic clove
  • 2 tomatoes, diced
  • Salt and pepper
  • 1/2 cup black olives, sliced
  • 1/2 cup fresh cheese, diced
  • Fresh oregano leaves to garnish

Directions

    Preheat the oven to 375°F.

    Cut the spaghetti squash in half, remove the seeds, and, if you want, sprinkle it with a tablespoon of olive oil. Put the halves upside down on a tray and bake for 45 minutes. Remove from the oven and let it cool. You can do this the day before, and once the squash is cold enough, you can cover it with something and put it in the fridge.

    Take the squash out of the fridge, turn it around and remove the seeds if you haven’t done so. Cut it in half with a knife and remove the strands using forks. The fiber should come out as if it were spaghetti.

    In the meantime, heat up the two remaining tablespoons of olive oil and sauté the onion and garlic until they’re really soft and start browning.

    Add the tomato, sauté briefly and then add salt and pepper.

    Add the olives, fresh cheese, spaghetti squash, and mix until it’s hot.

    Serve with fresh oregano leaves.
