Sweet Potato with Lime and Cilantro

Try cooking sweet potatoes with cilantro and you’ll be in for a pleasant surprise. Cilantro and lime are a really popular combination in Mexican food, and there’s a reason for that. I think that the taste of lime can bring out the flavor in certain ingredients, and sweet potatoes are not the exception. And cilantro has a fresh flavor and it’s perfect with vegetables. This sweet potato with lime is really easy to make and pairs perfectly as a side dish for burgers, meats, and fish.

Ingredients

  • 2 sweet potatoes, cut into 1” wide pieces
  • 3/4 teaspoon salt
  • 1 green lime (you’ll need 1/4 teaspoon zest and 1 1/2 tablespoons juice)
  • 35 fresh cilantro stems with leaves, washed and chopped (separate the chopped stems from the leaves)
  • 2 1/2 tablespoons oil

Directions

    Preheat the oven to 425° F.

    Mix the chopped sweet potatoes with salt, lime zest, chopped cilantro stems and oil.

    Put the mix on a baking tray so you can bake it all in one layer. Make sure the sweet potatoes are not overlapping.

    Bake for 25 minutes or until everything is cooked. Flip after about 12 minutes.

    Take the sweet potatoes out of the oven and let them rest for a couple of minutes. Mix the lime juice with the chopped cilantro leaves. Mix with the sweet potato and serve.
