These sweet treats made to look like sushi are popular, and I couldn’t resist preparing my own version and sharing it with you. A perfect recipe to have on hand for those days when the kids are home from school, they are also perfect for afterschool snacking. The best part is involving your kids in the kitchen, since this recipe is so easy to put together. Don’t forget to serve them with chopsticks to make snack time even more fun.

Ingredients

  • 6 cups puffed rice
  • 4 tablespoons unsalted butter
  • 2 1/2 cups mini marshmallows
  • 1 package (with 10 individual snacks) Betty Crocker™ Fruit Roll-Ups™ (variety pack)
  • Gummies and chocolate candies, for garnish

Directions

    Line a 13 x 9 inch rectangular pan with pan-lining paper and spray with some non-stick cooking spray.

    Combine the butter and marshmallows in a large container. Melt in the microwave in 30-second intervals for a total of 3 intervals. Stir.

    Add the puffed rice, mix and pour out onto the lined pan. Spread out the mix so the treats are about 1-inch high.

    Let cool. Use a cookie cutter or cut in 1 x 1 inch squares, or 1 x 2 inch rectangles to prepare the individual servings.

    Unroll the Betty Crocker™ Fruit Roll-Ups™ and wrap around the puffed-rice bars. Garnish with candies and serve.
