Tallarín saltado (stir-fried noodles) is an Asian dish that has become very popular in Peru, and it’s considered one of the favorite dishes in the country’s culinary repertoire. Its preparation is very quick, so make sure everything is ready, chopped and measured… It won’t take you too long to make lunch!

Ingredients

  • 3 tablespoons vegetable oil
  • 1 lb sliced mushrooms (oyster or any other type)
  • 2 minced garlic cloves
  • 1 red onion, cut into thick slices
  • 3 tomatoes, cut into thick slices
  • 1 ají (Peruvian pepper), cut lengthwise into thin strips
  • 3 tablespoons soy sauce
  • 3 tablespoons red wine vinegar
  • 1/2 cup vegetable broth
  • 1 teaspoon sesame oil
  • Salt and pepper
  • 1 lb Chinese noodles
  • Chopped cilantro leaves, for garnish

Directions

    In a large skillet, heat vegetable oil over medium heat.

    Add mushrooms, garlic, onion, tomatoes and ají (pepper). Cook for 3 minutes. Incorporate soy sauce and vinegar; combining everything.

    Add vegetable broth and sesame oil; season with salt and pepper to taste.

    In the meantime, cook the Chinese noodles according to package instructions. Drain.

    Divide the noodles into 4 plates and baste the vegetables with the cooking juice.

    Serve immediately.

    You can use Italian, quinoa or rice pasta for this dish. Choose the one you think is best.
