Turkey and potato meatloaf has become one of my family’s favorite dinners. My children love the sight of the puree wrapped in the meat. They think it’s different and fun, and they’re happy to eat it. This recipe is really easy to follow, and it’s made with ingredients that everyone loves. Give it a try!

Ingredients

For the turkey:

  • 1 1/2 - 2 lb ground turkey
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons ground garlic
  • 2 teaspoons onion powder
  • 1 egg
  • 3/4 cup breadcrumbs (panko)
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce

Rest of the ingredients:

  • 2 cups mashed potatoes, cooked
  • 2 tablespoons olive oil
  • Parsley for garnish (optional)

Directions

    Preheat the oven to 350° F. Coat a 9 x 5” baking dish with cooking spray.

    In a large bowl, combine the ingredients for the turkey cake until they’re well mixed.

    Place half the turkey mixture into the dish. Add the potato puree over the meat mixture, 1/4” away from the borders.

    Carefully put the rest of the turkey mixture over the puree and press softly. Brush some olive oil over the cake.

    Bake for 50 – 60 minutes or until a meat thermometer reads 160° F. Remove from the oven and let stand for 10 minutes.

    Remove the dish, garnish with parsley to taste, and serve.

    To save some time, you can use instant mashed potatoes. Just prepare according to instructions.

    You can also prepare this meatloaf with beef or chicken.
