Bread is one of my favorite things on this beautiful Earth! I love it and I can't live without it. I will go wholesome in other ways but I will not give up my bread. Ingredients

  • 3 cups whole wheat bread flour
  • 1 packet active yeast
  • 2 cups chopped olives, drained and pits removed
  • 1 1/2 cups water
  • Olive oil, to taste

Directions

    In a large bowl mix flour and yeast together with a fork to combine equally.

    Add in chopped olives and mix well.

    Slowly pour in water and mix until combined.

    Cover the top of the bowl and let sit for 20 hours at room temperature, to allow rising.

    Flour a kitchen towel generously. Set aside.

    On a clean work surface, sprinkle with a nice handful of flour.

    Place dough on floured surface and knead until a loaf is formed.

    Place loaf in floured kitchen towel, cover it up and allow to rise for another 2 hours.

    Preheat oven to 500°F.

    Lightly grease a cast iron Dutch oven or heavy enameled cast iron pot with olive oil then flop bread dough into pan. Cover with lid and place in the oven.

    Bake for 40 minutes, then remove lid and bake for another 20 to 30 minutes or until crust is brown.

    Carefully remove bread from pot, and let cool completely on a cooling rack before slicing.

    Serve and enjoy!

    You can also add sundried tomatoes to dough if you wish.

    You can even use corn meal if you have some on hand. If not, flour works fine.
