We grill every weekend during the entire summer and I enjoy having leftovers to transform into easy weeknight dinners. This zesty chicken bake is one of our go to meals for its ease and many of the ingredients we always have on hand.

Ingredients

  • Vegetable oil
  • 12 (6 inch) corn tortillas
  • 1/2 medium-sized onion, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup cilantro
  • 1 jar Muir Glen™ organic chipotle salsa
  • 4 cups shredded chicken
  • 2 cups shredded cheese

    Preheat oven to 350°F. Lightly grease a 9x13 baking pan.

    In a large nonstick skillet over medium high heat lightly fry corn tortillas in vegetable oil. Place on a paper towel lined plate to drain. In the same skillet add diced onion, garlic and cook until soft and translucent, about 4 minutes. Stir in chicken broth, cilantro and salsa; heat thorough and add shredded chicken, reduce heat and simmer.

    Place a layer of corn tortillas in baking pan, top with shredded chicken mixture and cheese; repeat.

    Bake for 20 minutes until cheese is bubbly around edges. Let stand 5 minutes before serving.
