Ingredientes

Dressing

  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons gluten-free reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon brown sugar, packed
  • 1 teaspoon Sriracha sauce
  • 3 green onions, sliced on the diagonal (about 1/2 cup)
  • 1 tablespoon finely chopped gingerroot

Salad

  • 12 oz uncooked gluten-free soba (buckwheat) noodles
  • 1 bunch (8 oz) fresh kale; ribs removed, leaves thinly sliced (6 cups)
  • 1 cup frozen shelled edamame
  • 2 cups shredded cooked chicken breast
  • 1 tablespoon sesame seed

Instrucciones

    In large bowl, beat Dressing ingredients with whisk; set aside.

    Heat Dutch oven two-thirds filled with water to boiling. Add noodles; return to boiling. Boil 2 minutes; add kale and edamame. Return to boiling; cook 4 minutes. Drain noodle mixture; rinse under cold water until noodles are cool. Toss to remove excess water.

    Add noodle mixture and chicken to dressing. Toss to thoroughly coat. Sprinkle with sesame seed.
