Bacon and Avocado Omelet

I've noticed that when I make the time to sit down and enjoy a balanced breakfast, I really do feel much better for the rest of the day. On the other hand, I understand that we can't always sit down to eat pancakes, especially if we have young children who we have to attend to and prepare for school. In my case, from the moment I wake up until my kids leave for school, there's no time for me to rest; I prepare their lunch at the same time I'm getting breakfast ready, so having a repertoire of quick breakfasts is very important to me. My husband loves eggs, especially omelets, and he easily convinced the rest of my family that they're delicious, so now they're a household favorite. Preparing an omelet only takes a few minutes and it'll keep you satisfied for a few hours. Our list of omelet recipes is extensive, but today I'll share one of our favorites with you.

Ingredients

  • 2 strips of bacon
  • 2 eggs
  • Pepper to taste
  • Avocado to taste
  • A few leaves of washed spinach (optional)

Directions

    Chop the bacon into small pieces and place them in the pan over medium-high heat.

    While the bacon fries, crack the eggs over a bowl, add pepper to taste, and beat well with a fork.

    Once the bacon is fried, remove the pan from the heat and carefully pour out the excess oil into a glass container, leaving a little in the pan to fry the eggs.

    Return the pan to the stove and pour in the eggs. Stir quickly until the bacon and egg are well mixed and let cook for 2-3 minutes until the egg cooks completely.

    Add the avocado and spinach (optional).

    Grab the pan by the handle and carefully let the egg slide off into a plate and fold.

Expert Tips

    If you have kitchen scissors, you can use them to cut the bacon; this will help you save time.

    You can fry the bacon ahead of time and refrigerate it in a vacuum-sealed container; just remember to include a bit of the bacon grease to fry the eggs.
