Whenever I have an unexpected crowd stop by my home for breakfast, I like to lay out a delicious taco spread, also known as a "taquiza." A taquiza consists of various taco fillings for your guests to prepare a taco according to their preferences. From scrambled eggs, potatoes with chorizo to beans, cheese and nopalitos, everyone will walk away with a belly full of their favorite breakfast taco. To spice things up, I like to include condiments such as a variety of salsas, pico de gallo, crumbled cheeses and whole Serrano chiles. Next time you have guests over for breakfast or brunch, plan a simple taquiza with readily available ingredients that can be cooked quickly. This no-fail plan is inexpensive and a guaranteed success.

Ingredients

  • 4 tablespoons canola oil
  • 3 large gold potatoes, chopped
  • Salt and pepper to taste
  • 12 eggs
  • 1/3 cup milk
  • 2 Roma tomatoes, chopped
  • 1 large jalapeño, chopped
  • 1/2 onion, chopped
  • 1/3 cup fresh cilantro, chopped
  • 3 cups cooked pinto beans, warm

Directions

    In a large frying pan, heat 2 tablespoons oil over low-medium heat.

    Add potatoes and cook for approximately 15 minutes, stirring frequently. Season with salt and pepper to taste. Set aside.

    In a large bowl, whisk eggs and milk together until thoroughly combined.

    In a large frying pan, heat remaining 2 tablespoons oil over low-medium heat.

    Add eggs to frying pan and carefully fold eggs until the scramble is set and eggs are cooked. Remove from heat and set aside.

    Combine tomatoes, jalapeño, onion and cilantro in a serving bowl. Toss to combine all ingredients.

    Place eggs in a large serving dish and place at the center of your taquiza table. Serve egg plate with pico de gallo, cooked potatoes, warm beans and tortillas.
