Chard is a tasty veggie filled with fiber that can be cooked in many different ways. You can add it to pasta soup, stews and as a side to any dish. I grew up eating chard with beans that my mom would prepare and it was always delicious. This is why I want to share my mom's recipe with you so you can use it as a side for your family. It takes just 30 minutes and I’m sure they'll love it. Enjoy!

Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 bunch Swiss chard (5-6 large leaves) clean and chopped
  • 2 cups canned white beans
  • Salt and pepper to taste

Directions

    Place a pot on the stove, turn the heat to medium and add the olive oil.

    Sauté the onion in the oil and add the chopped pepper when the onion becomes transparent. Now add the chopped chard and stir. Finally, add the beans and season with salt and pepper. Cover and let cook for a few minutes.

    Serve hot as a side with steak or grilled chicken. You can also serve it as a main dish with rice.

    You can use black or read beans instead of white beans.
