Chicken Breast with Hoisin Sauce and Honey

I must confess that sometimes I feel like I need to eat something that’s quick and easy to prepare, but not necessarily a salad. I buy these chicken breasts already cut into strips at the supermarket and they cook very quickly on the grill or in a pan, served with a side of steamed vegetables this meal makes the perfect lunch or dinner. I love hoisin sauce because it has so much flavor and is so versatile that I can serve it with a variety of meats. I really like topping off this dish with crunchy wonton noodles, but you can omit this ingredient, though it does give this dish a special touch. Besides, they are quickly fried and can be put away in a container for days without becoming soft. I know many people like to avoid carbs, but the truth is I don’t like denying myself of delicious things so I indulge once in a while, with moderation of course. Moderation is key. Ingredients

Sauce:

  • 1/3 cup of rice vinegar
  • 1 tablespoon of honey
  • 2 tablespoons of hoisin sauce
  • 1/2 cup of chicken broth or water
  • 2 tablespoons of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of butter

Vegetables:

  • 1 large carrot, julienned
  • 8 ozs of green beans
  • Salt
  • 1/2 teaspoon of sesame seeds

Chicken:

  • 1 lb of chicken tenderloin
  • Salt and pepper
  • 2 tablespoons of vegetable oil

Topping:

  • 3 sheets of wonton dough
  • 1/3 cup of vegetable oil

    Sauce:

    Boil the vinegar and honey over medium heat in a small pot until the substance is reduced to half. Immediately add the chicken broth and continue to boil until it is reduced to half again.

    Separately, combine the hoisin and soy sauces. Add this mixture to the sauce and allow it to take shape (it should have the texture of light honey). Add the sesame oil and then the butter. Set aside.

    Chicken:

    Meanwhile, season the chicken with salt and pepper. Cover in sesame seeds.

    Heat the oil in a saucepan over medium heat and sear the chicken until they are golden brown on both sides. Remove from the saucepan and set aside.

    Vegetables:

    Cook the green beans in salted water for 5 minutes. Strain and cool in a large bowl with ice. Heat the green beans in a saucepan before serving.

    Steam the carrots and season with salt and sesame seeds.

    Roll the wonton sheets up like a tower. Use a sharp knife to cut the wonton dough into very thin strips.

    Heat the oil in a saucepan and fry the strips of dough until golden brown and crunch. Remove excess oil with paper towel.

    Serve half of the chicken strips on a dish. Serve with a portion of julienned carrots and green beans. Sprinkle with sauce. Place a portion of wonton noodles on the chicken. Serve immediately.

    Use broccoli or cauliflower instead of green beans.

    If you can’t find tenderloin, buy chicken breast and cut into filets. After this the recipe is the same.
