Ingredients

  • 1 lb uncooked chicken breast, shredded
  • 2 tablespoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 package (13.25 oz) pasta (your favorite kind)
  • 2 tablespoons olive or canola oil
  • 1 cup onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 cups bell peppers of your choice, julienned
  • 1/4 cup Progresso™ Chicken Broth
  • Juice of 1/2 lemon
  • Cilantro, to taste (optional)

Directions

    Cover the chicken with the taco seasoning. Set aside.

    Cook the pasta following the package instructions.

    Meanwhile, heat the oil in a large pot and fry the chicken. When it's cooked, remove from the pot and, in the same oil, cook the onion and garlic for 3 minutes. Fold in the peppers and cook for 3 minutes. Add the chicken broth and chicken, cover, lower the temperature and simmer for 10 minutes.

    The pasta should be ready by now. Drain and return to the pot. When the veggies are soft and cooked through, pour them over the pasta. Add the lemon juice and chopped cilantro. Adjust the seasoning to taste and serve.
