Coconut, Pineapple and Ginger Elixir

As a kid, non-alcoholic piña coladas were my favorite drinks whenever we went on vacation to the beach. I still love drinking piña colada (with or without alcohol) on hot summer days, or when I want to feel like I’m on vacation. This healthy version brings that wonderful feeling back, and it’s also amazing for my health.

Ingredients

  • 1 cup of pineapple, chopped
  • 2 cups of coconut water
  • 1 inch piece of ginger, peeled and chopped
  • 1/2 cup coconut meat, chopped

Directions

    Put all the ingredients in the blender, and mix until smooth.

    Pass through a colander, and serve in two glasses.

Expert Tips

  • tip 1
    If you want a thicker texture with more fiber, don’t strain the juice.
  • tip 2
    When choosing the pineapple, make sure it has a very sweet aroma. That way you will know it’s ripe.
  • tip 3
    The coconut meat needs to be fresh, not dried. You can buy a whole coconut and use the water and meat inside to make this smoothie. You can also buy bottled coconut water, and leave the fresh coconut meat out of the recipe.
