Ingredients

Cod

  • 3 to 4 tablespoons vegetable oil
  • 10 cod fillets (about 4 lb)

Caper Sauce

  • 1/4 cup butter
  • 1/2 cup onion, finely chopped (1 medium)
  • 1 clove garlic, finely chopped
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 cup milk
  • 1/2 cup whipping cream
  • 5 tablespoons capers and 1/4 cup liquid from caper jar
  • 1 teaspoon chicken bouillon granules
  • 1/8 teaspoon pepper
  • Extra capers, if desired

Directions

    In 12-inch nonstick skillet, heat oil over medium-high heat. Working in batches, add half of the cod. Cook 6 to 8 minutes, turning once, until fish flakes easily with fork. Cover; keep warm.

    In 2-quart saucepan, melt butter over medium-high heat. Cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until onion is soft. Stir in flour; cook 2 to 3 minutes, stirring constantly, until flour is light brown. Remove from heat; gradually stir in milk until stirred in completely.

    Return to heat. Reduce heat to medium-low. Stir in cream. Mash 5 tablespoons capers with fork. Stir capers and liquid into sauce. Stir in chicken bouillon and pepper. Place cod on large serving platter; spoon sauce over cod. Garnish with capers.
