Colorful Quinoa and Flower Salad

When it comes to salads, quinoa adds the perfect texture and flower petals supply an extra beauty kick. But before including petals, make sure the flowers haven’t been sprayed with pesticides.

Ingredients

For the salad:

  • 1 cup white quinoa, cooked
  • 1/2 cup red quinoa, cooked
  • 1/2 zucchini, diced
  • 1 cup broccoli, cut into small florets
  • 1 cup baby spinach, julienned
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup seedless cherries
  • 1/2 cup red and yellow peppers
  • Salt and pepper
  • 1/2 cup kale microgreens
  • Nasturtium flowers

For the dressing:

  • 1 garlic clove
  • 1/3 cup tahini
  • Juice of 1/2 lemon
  • 1/2 cup olive oil
  • Salt and pepper
  • 1 tablespoon flaxseed

Directions

    Boil the quinoa for 18 minutes (use a 2:1 water-quinoa ratio). Drain and let cool in room temperature.

    Boil the zucchini for 5 minutes. Drain and place in ice water.

    Repeat the previous step with broccoli.

    In a bowl, combine the quinoa with zucchini, broccoli, spinach, tomato, cherries, salt and pepper.

    In another bowl, mix the dressing ingredients. Add to the salad.

    Distribute in three dishes and garnish with kale microgreens and nasturtium flowers. Sprinkle with olive oil and serve immediately.

Expert Tips

  • tip 1
    You can replace nasturtium flowers with rose or carnation petals or with aromatic herbal flowers like rosemary or basil.
  • tip 2
    Make sure the flowers and herbs you use don’t contain pesticides. Rinse well to remove insects.

    You can use other vegetables, like cucumbers, asparagus, cauliflower or whichever ones you have handy!
