Conch Fritters are a typical dish from the Bahamas. If you've had the opportunity to taste the original then you know that they have a very special taste. It's not easy to find conch in the U.S., but you can recreate this recipe using other types of seafood like shrimp, calamari or in this case, crab. This dish is a perfect afternoon snack or light lunch. Just add a salad and fresh water and you'll have the perfect meal. Be sure to serve it immediately for the best taste.

Ingredients

  • 2-3 cups oil for frying
  • 1 cup flour
  • 2 eggs
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1 1/2 cups finely chopped crab
  • 2 to 4 lemons

For the red sauce

  • 2 cups water
  • 6 chiles de arbol, seeded
  • 1 garlic clove
  • 1/4 yellow onion
  • 1 can (28 oz) Muir Glen™ fire roasted whole tomatoes
  • 1 teaspoon salt

Directions

    Pour the oil in a pot on high heat. If you have a fryer, use that.

    Mix the flour, eggs, milk, salt and pepper in a bowl. When everything is well integrated, add onion, celery and crab. Stir well.

    Take one tablespoon in the of the crab mixture and carefully pour into the hot oil, repeat as much as you can until there is no space left in the pot. Flip after a few seconds when they take on a browned color. Remove from the oil and place on paper towels to absorb excess oil. Repeat until you finish with all of the dough.

    Remember to keep the oil hot so the conch fries quickly.

    For the sauce: Heat the water with the chiles de arbol in a small pot. Let boil for a few minutes and remove from the heat. Add the onion and garlic to the water, cover and let sit for 10 minutes in the hot water.

    Pour 6 canned tomatoes into the blender with salt, the chiles, garlic and one cup of the water where the chiles were boiled and blend until they mix well. If necessary, add more water. The sauce should have a slightly thick consistency.

    Serve the fritters with lime and sauce.
