This creamy soup recipe is perfect for those cool days now that the temperatures are starting to drop in our part of the world. I make soup whenever I can because it’s so comforting and it reminds me of the soups my mother used to make. You can adjust this recipe to give it the desired consistency: if you prefer it to be more creamy, simply add a little more heavy cream or milk and you’ll give it a different and delicious touch. Ingredients

  • 2 medium-size chayotes, cut into cubes
  • 6 cups chicken or vegetable broth
  • 1 chicken breast, cut into cubes
  • 1 small onion, chopped
  • 1 small carrot, cut into cubes
  • 2 garlic cloves, chopped
  • 1 celery stalk, chopped
  • Fresh cilantro, to taste, chopped
  • 1/4 cup heavy cream (optional)
  • Salt and pepper, to taste

Directions

  • 1
    Place all ingredients in a large pot and cook on medium-high heat for 25 minutes.

    Transfer to a blender and process, being careful not to burn yourself.

    Return to pot, add heavy cream if you desire, season with salt and pepper.

    Keep warm until it’s time to serve.

    Serve and enjoy!

    For a heartier soup, add 1 medium potato cut into cubes.

    For a different flavor, use deboned chicken meat, ham or bacon.
