Today I bring you a recipe that fits well in our tight schedules. With very few ingredients, the final product is delicioso and intriguing. I used fresh salmon for this recipe, but this breading works for any other kind of fish; it's especially good on sea bass, halibut and tilapia.

Ingredients

  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup Fiber One™ Protein Cranberry Almond cereal
  • 2 garlic cloves, chopped

Directions

    Preheat the oven to 375° F. Spray a baking sheet with cooking spray.

    Arrange the fish fillets on the baking sheet. Spread olive oil over each fillet and season with salt and pepper.

    Put the Fiber One™ cereal in a food processor with garlic and process. Season with salt and pepper.

    Immediately before baking, coat each fillet with the Fiber One™ breading mix. Set in the oven and bake until the fish is cooked and the breading golden brown, about 15-20 minutes, depending on the thickness of the fillets. Plate the fish and serve immediately.
