Grits with Shrimp and Chorizo

Shrimp recipes could easily be considered among the most coveted because it's such a versatile ingredient. This dish, for example, combines the texture of grits with an exquisite tomato and pepper sauce. The final touch is the grilled shrimp that results in a very special rustic dish. You can add other ingredients when you're ready to serve, but pieces of chorizo, manchego cheese and, of course, shrimp are a more than perfect combination.

Ingredients

  • 4 cups water
  • 2 cups grits
  • 2 cups grated Parmesan or Manchego cheese
  • 1 cup shaved almonds
  • 2 cloves garlic, finely chopped
  • 1 slice of white bread crumbled
  • 1 red bell pepper
  • 1 cup Muir Glen™ organic ground peeled tomatoes
  • 2 tablespoons paprika
  • 2 tablespoons balsamic or red vinegar
  • 3 tablespoons olive oil
  • 2 chorizos
  • 2 shrimp

Directions

    Boil the water and add the polenta. Stir constantly until the mixture thickens.

    Let cook for approximately 30 minutes, add the cheese and set aside.

    In the meantime, prepare the sauce by toasting the almonds in a pan along with the chopped garlic and pieces of crumbled bread.

    Brown the red pepper directly over the heat of the stove, remove the skin and let cool.

    Add the almond mixture to the blender or food processor. Pulverize the ingredients to then add the roasted pepper, cup of tomato, paprika, vinegar and olive oil.

    Blend until you have a thick sauce. Set aside.

    Fry the chorizo and shrimp. Cut the chorizo into slices and set aside.

    Serve a layer of polenta in a deep dish, cover with sauce and a few pieces of chorizo.

    Add more polenta, a bit of sauce and pieces of chorizo. Finish with the shrimp on the surface.

    Serve immediately.
