Some aromas transport us directly to childhood memories; this was the case with this recipe for me. As soon as I began my preparation, I was filled with memories of my maternal grandmother. She usually prepared this in her home and I remember that no one liked the smell. At the end of the day, she enjoyed it and didn't pay too much mind to those of us who didn't like it. She prepared herring with eggs as a kind of brunch and she would sit and enjoy her snack with freshly baked warm bread or boiled tubers like yucca, green bananas or malanga. I'm filled with memories of seeing her sit at the table to enjoy her preparation with great enthusiasm. Many years passed before I finally decided to try herring, but not like my grandmother prepared it.Instead, I prepared it with a tomato, avocado and onion salad. But I have created my grandmother's recipe many times. So here I leave you with the recipe if you care to try it; it's easy to prepare and super delicious!

Ingredients

  • 1 lb of smoked herring
  • 8 eggs, whipped
  • 1/2 red pepper, cut into strips
  • 1 small onion cut into thin strips
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Green onion to decorate

Directions

    Desalinate the herring if necessary with a lot for water for approximately 6 hours or all night, if you prefer.

    Drain and rinse several times to remove the water.

    Boil in water for 15 to 20 minutes or until it's tender, ring, shred, remove the skin and bones, then set aside.

    Heat the oil in a saucepan over low heat. Saute the onions until they become transparent.

    Add the herring and pepper and then cook for approximately 2 minutes.

    Pour in the whipped eggs and cook stirring occasionally until the egg is well cooked. Don't let it burn. Correct the salt and pepper, but keep in mind that the herring is salty.

Expert Tips

    You can change the water once or twice while you're cooking it to be sure that it doesn't come out too salty.

    You can add 1 mashed garlic clove if you like, or even a bit of spicy sauce.
