Meatloaf with Chorizo

To celebrate Father's Day in our home, there has to be meat, but sometimes finances don't allow us to buy a lot. My solution: Meatloaf! To make it more flavorful and irresistible to your dad or husband, add Spanish or Mexican chorizo (spicy sausage), or any sausage of your choice. Serve with eggs and onion rings and you'll have the perfect celebration.

Ingredients

  • 1 lb ground beef
  • 1/2 lb chorizo, skinless and shredded
  • 1/2 onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 medium carrot, peeled and finely chopped
  • 1/2 cup bread crumbs
  • 2 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • Ground pepper to taste
  • Ground chipotle powder to taste

Directions

    Heat oven to 350°F.

    Apply cooking spray to a rectangular 9x5 cake pan.

    In a large bowl, mix the ground beef, skinless chorizo, onion, celery and carrot well with your hands.

    Add the bread crumbs and continue to mix.

    In a small bowl, beat the eggs and milk until you cannot see the yolk. Add salt, pepper and ground chile. Mix well, and pour on top of the meat and chorizo, use your hands to blend everything together.

    Pour the mix in the cake pan and cover with aluminum foil. Bake for 30 minutes, remove the lid and bake for 10 more minutes.

    Remove from the oven and let cool for a bit.

    Remove from the pan, cut and serve hot.

Expert Tips

  • tip 1
    You know the meatloaf is ready if it is firm when pressed. If you use a thermometer, it should read 160°F.
  • tip 2
    If you have leftovers, use for sandwiches or shred the meatloaf and mix with mayonnaise. You can use it to stuff tomatoes, avocados or eggs.
  • tip 3
    Accompany with egg and onion rings.
