Mini Ramen Burgers

A fun spin on the classic burger, these mini ramen burgers are perfect for a kid’s party or a fun movie night.

Ingredients

  • 2 packages ramen noodles
  • 2 eggs
  • 1/2 cup mayonnaise
  • 1 poblano pepper, roasted and minced
  • Cooking oil spray
  • 1 lb ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 2 teaspoons soy sauce
  • 2 teaspoons scallions, minced
  • Fresh spinach, to taste

    Cook ramen according to package instructions, drain and allow to cool completely. Add eggs and toss to coat ramen completely. Divide ramen into 12 mini ramekins, place plastic wrap over ramen and press down firmly. Refrigerate for 1 hour or until ramen is firm.

    In a food processor, blend together mayonnaise and roasted poblano until smooth.

    Pre-heat oven to 250 °F. Heat non-stick skillet over medium-high heat. Spray with cooking spray and carefully invert two ramekins of ramen, cook until golden brown on each side, about 3-4 minutes. Place on a baking sheet lined with paper towels and place in warm oven until all ramen buns are cooked.

    In a bowl combine ground beef, cumin, salt, pepper, soy sauce and scallions. Shape burger patties in a size similar to that of ramen buns. In same skillet used to cook ramen buns, cook burgers over medium heat until fully cooked, about 4 minutes on each side.

    To one ramen bun, add one spoonful of poblano mayo and top with spinach, add burger patty and top with another ramen bun.

    Add additional spices to ramen for a spicy kick. Try red chile pepper flakes or smoked ancho chile pepper.
