Ingredients

For the garlic confit:

  • 2 peeled garlic heads
  • 2 cups olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground pepper

For the potatoes:

  • 1 lb gourmet potato medley (includes three potato varieties: purple, white and pink)
  • 1/2 cup garlic aromatized olive oil
  • 1 1/2 soup spoons garlic, cumin, pepper and salt seasoning
  • 1/3 cup lemon juice
  • 1/2 cup garlic confit
  • 1 sliced lemon for garnish

    Start by cleaning the garlic and peeling the garlic cloves. Add the garlic and olive oil to a small pot. Cook it in the oil over low heat for about 45 minutes. Stir occasionally. When the garlic is ready, it will be light golden brown and tender. Remove it from the oil and place in a bowl; season with some salt and pepper. Don’t get rid of the oil, as you will need it to cook the papas bravas. Wash the potatoes with water and dry with a towel. Place the potatoes in a heat-resistant pan and coat with the garlic aromatized oil. Add the seasoning and lemon juice. Cover the pan with aluminum foil and cook in the oven at a temperature of 400° for 40 minutes. When the potatoes are tender, add the garlic confit and brown in the broiler for a few minutes. Serve in a bowl and garnish with lemon slices.
