Pasta with Pumpkin and Thyme

One of the best ways of making sure a recipe will be economical is to use ingredients that are in season. These are usually easy to find and are almost always on sale. And to top it all off, they’re in season which means they’re at their peak in taste. The most delicious ingredients are always the seasonal ones. If you are looking for an easy and cheap dinner recipe, I recommended starting there. This dish, for example, makes great use of the pumpkins that are in season this time of year. Another economical ingredient that everyone loves is pasta, so combining these two ingredients will result in a delicious dinner that won’t cost you too much energy or money.

Ingredients

  • 1 small pumpkin, peeled, seedless and diced
  • 1/4 cup of olive oil
  • 1 teaspoon of fresh thyme
  • Salt and pepper
  • 1/2 onion, chopped
  • 4 garlic cloves, chopped
  • Juice and zest from 1 lemon
  • 3/4 lb of spaghetti
  • 1/4 cup ground nuts
  • 1/4 cup grated parmesan cheese, optional

Directions

    Preheat the oven to 375°F.

    Place the pumpkin on a baking dish.

    Mix with one tablespoon of olive oil, thyme, salt and pepper until everything is covered in oil.

    Bake until the pumpkin is soft (40 minutes). Turn off the heat and remove from oven.

    Boil a pot of water with salt and cook the pasta according to the instructions on the package.

    In the meantime, heat 1 tablespoon of olive oil in saucepan over medium heat.

    Sautee the onion with the garlic for 5 minutes, moving around until they’re soft and begin to brown.

    Add the lemon and pumpkin until everything is hot and pour over the paste with 2 tablespoons of olive oil and the nuts.

    Mix well and add more salt and pepper if necessary.

    Serve on two plates and sprinkle parmesan cheese over it.

    The pumpkin can be baked in advance and refrigerated in a container with a lid for a couple of days.

    This pumpkin sauce can also be served with quinoa or couscous.
