Potato, Chicken and Mushroom Empanadas

Autumn is a season that brings with it a number of wonderful things. The temperatures are cooler, the rain arrives and of course, the plentiful harvests. Mushrooms, for example, are an example of the delicious ingredients that come with this season and with them we can create a variety of dishes as delicious as they are simple. How would you like delicious empanadas made with potatoes, chicken and mushrooms to warm you up on a cold afternoon? Serve them with your favorite sauce and turn this simple recipe into a special moment.

Ingredients

  • 1 large potato
  • 2 chicken breasts, cooked
  • 1 teaspoon butter
  • 1 clove garlic, finely chopped
  • 1 cup sliced mushrooms
  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Original Biscuits (8 Count)
  • 1 egg yolk
  • Salt to taste

Directions

    Heat the oven to 350°F.
  • 2
    Dice the potatoes into large cubes and add to a pot with water and salt. Boil until soft.

    Once the potatoes are cooked, remove them from the heat, drain and apply pressure until you have a puree.

    Shred the chicken breast. Set aside.
  • 5
    Add the butter to a pan with the mushrooms and a bit of salt. Add the chopped garlic, stir the ingredients and let cook at low heat for at least 5 minutes.

    Mix the potatoes with the chicken and mushrooms.

    Open the Pillsbury™ Grands!™ biscuits! and separate the biscuits. Open each biscuit in the middle and fill with the chicken-potato mixture. Close each biscuit and seal by applying pressure to the borders with a fork.

    Cover the surface of each biscuit with a layer of egg yolk to give them a pretty color and shine.

    Place the empanadas in the oven for approximately 15 minutes or until they’ve turned golden brown and crunchy.

    Serve hot.
