Ingredients

  • 1 lb sweet peppers
  • 4 Cubanela peppers
  • 4 large onions
  • 2 bunches fresh cilantro
  • 3 cloves garlic
  • 2 tablespoons fresh oregano leaves
  • 1 teaspoon salt
  • 1/4 cup vegetable oil

Directions

    Wash and cut peppers, onions and cilantro into small pieces. Place in a food processor or blender along with garlic and oregano. Process until you have the desired consistency.

    Add salt and oil, then mix with a spatula. Divide the mixture into 2 containers with lids. Sofrito can be stored in the fridge for up to 7 days or stored in the freezer until ready to use.
