Ingredients

  • 1 large head cabbage, thinly sliced
  • 4 1/3 tablespoons sea salt, divided
  • 8 cups warm water
  • 1 inch piece ginger, peeled and diced
  • 2 large garlic cloves
  • 1 jalapeno, sliced (remove seeds for less heat)
  • 1 tablespoon sugar
  • 1 tablespoon fish sauce
  • 4 medium carrots, peeled and cut into 1/4 inch strips
  • 3 scallions cut into 1/4 inch lengths
  • 1 large jicama, peeled and cut into 1/4 inch strips
  • 1/2 cup cilantro, washed and stems removed

Directions

    Place cabbage into a large bowl, sprinkle with 4 tablespoons salt and cover with warm water. Mix with fingers to combine cabbage and salt; set aside for 30 minutes. Drain well and return to bowl.

    In a food processor puree ginger, garlic cloves, jalapeno, sugar, fish sauce and 1/3 tablespoon salt. Taste and adjust seasoning to your preference.

    To the drained cabbage add carrots, scallions, jicama, puree from blender, and cilantro; toss to coat.

    Place in a clean glass jar and refrigerate for 4-6 hours.
