Rhubarb is a vegetable that goes really well in desserts and salads. Its flavor is slightly sour, so it needs to be combined with sugar, resulting in an exceptional sweet-and-sour taste. Rhubarb comes in green and red varieties. Red rhubarb is ideal when you want to add some color to your dishes. Make sure to discard rhubarb leaves, as they are toxic. The stems, however, can be eaten safely. This rhubarb bread is sweet, sour, soft, and golden. It goes perfectly with a glass of milk or a cup of coffee.

Ingredients

For the rhubarb sauce:

  • 3 cups rhubarb stems, washed and diced
  • 1/2 cup sugar
  • Zest of 1 lemon
  • 1-2 teaspoons water

For the bread:

  • 1 box (16 oz) Betty Crocker™ Pound Cake Mix
  • 2/3 cup water
  • 2 eggs
  • 1/4 cup butter, softened at room temperature

You will also need:

  • 2 8x4 loaf pans or 1 9x5 mold.
  • Baking spray

    Preheat the oven to 350°F.

    For the rhubarb sauce: Combine rhubarb with sugar, lemon zest, and water. Cook over high heat. When the mixture starts to boil, lower the temperature, and cook for 8 minutes until it becomes a sauce.

    For the bread: Beat cake mix, water, eggs, and sugar at high speed for 2 minutes. The dough's consistency should be very thick. Set aside.

    Grease the loaf pans with baking spray and set aside.

    Empty half a cup of rhubarb sauce into the dough and mix slightly, just to blend the sauce in.

    Empty the dough into the molds and bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. If using just one large mold, bake for 50 to 60 minutes.

    Let cool for 10 minutes.

    Spread the remaining rhubarb sauce over the two loaves.
