Ingredients

  • 2 packages (3 oz each) sliced salmon lox
  • 1/2 cup fresh arugula
  • 1/4 cup diced English (seedless) cucumber
  • 1 tablespoon sliced green onion (1 medium)
  • 1 tablespoon capers

Vinaigrette

  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1/2 teaspoon red pepper flakes
  • 1/8 teaspoon salt, if desired

Directions

    Arrange salmon lox on serving platter. Top with arugula, cucumber, green onion and capers.

    In small tightly covered container, shake Vinaigrette ingredients until blended. Drizzle on top. Serve immediately.
