Cabbage and Carrot Tortillas

These cabbage and carrot tortillas are a delicious addition to any main dish. Personally I love this option because I tend to get bored of rice and potatoes all the time. If you want to give it a touch of color you can use a mixture of green and purple cabbage. I serve it with a bit of sour cream, as this gives you a perfect contrast to the flavor of the vegetables. Enjoy!

Ingredients

  • 1/2 small cabbage, chopped into thin strip
  • 3 medium carrots, peeled and cut into thin strips
  • 2 green onions cut into thin slices
  • 1/2 cup Gold Medal™ all-purpose flour or whole wheat flour
  • 2 eggs, lightly beaten
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup vegetable oil or corn oil for frying

Directions

    In a medium bowl mix the cabbage, carrots and onions. Sprinkle in the flour and mix until most of the vegetables are covered with flour.

    Add the beaten eggs and cayenne pepper, then mix until well combined. Season with salt and pepper to taste.

    Place the oil in a skillet over medium heat and allow it to warm. When the oil is hot add 1/2 cup of the vegetable mixture. Use a spatula to mash it down a bit and give round-cake form. Let cook for 2-3 minutes, or until golden, turn and cook the other side. Remove from pan carefully and place on a plate with paper towels to absorb excess fat. Repeat the same procedure with the remaining mixture.

    Serve hot as an accompaniment to your main course.

    To save time you can grate the carrot rather than cut into thin strips or buy carrots pre-chopped.
