Chicken Criolla Kebabs

A kebab is made from pieces of meat, vegetables, fish and/or seafood, broiled or grilled, skewered together by a stick made of cane, wood or metal. This recipe is on popular way to prepare chicken on the grill in Peru, but I decided to dice the chicken and serve them as kebabs. I hope you like them.

Ingredients

  • 2 lb boneless and skinless chicken breasts
  • 1 cup of lime juice
  • 3 tablespoons of mustard
  • 1 teaspoon of paprika
  • 1 teaspoon of ground chili pepper
  • 2 teaspoons of oregano
  • 2 garlic cloves, finely chopped
  • Salt and pepper, to taste
  • Extra virgin olive oil, to taste

Directions

    Place the mustard, oregano, garlic, pepper and paprika in a bowl and mix until it’s a sauce or dressing.

    Add the lime juice carefully. Season the mixture with salt, pepper and olive oil.

    Let the chicken marinate for at least 1 hour to absorb the taste of the dressing.

    Cut the chicken into medium pieces and place skewer them on wood and metal sticks.
  • 5
    Cover the dressing in the rest of the dressing before placing them on the grill and while it cooks to keep it moisturized, takes color and becomes aromatic.

    You can serve with potato and garlic or hot sauce.

    If you plan on using wooden sticks, soak in water first so they do not burn on the grill.
