Ingredients

  • 2 large cucumbers
  • 3 cups plain yogurt
  • 1 garlic clove
  • Salt to taste
  • Croutons to decorate, optional

Directions

    Peel the cucumbers and dice.

    Add to the blender and process with the yogurt, garlic and salt.

    Blend until it has a creamy consistency. Test for salt in case it needs more.

    Let the soup sit in the refrigerator and serve cold.

    Serve with toast.
