St. Patrick's Day is right around the corner and green is the color of this celebration. I drew inspiration from a classic children’s book to prepare today's recipe: green egg omelet with ham. It's delicious and perfect for St. Patrick's Day celebrations. Enjoy!

Ingredients

  • 4 eggs
  • 1 cup of cooked spinach
  • 6 slices of hass avocado
  • 2 tomatoes cut in half
  • Salt and pepper to taste
  • 2 sprigs of Chinese parsley
  • 6 slices of ham or Canadian bacon

Directions

    Add the eggs and spinach into a blender and mix until everything is green in color. Add salt and pepper to taste.

    Place a saucepan on the stove and add a little bit of safflower oil. When the oil is hot add the egg and spinach mixture and cook on both sides.

    Cook the ham for a few minutes.

    Serve the green eggs with ham on a place and decorate with tomatoes and parsley sprigs.

    Add slices of avocado to give the dish a Latin touch. This breakfast is nutritious and delicious.
