A few years ago, I was driving home with my son and fiancé from a quick turnaround trip to Arizona. We were driving along the beautiful Arizona desert when we were all suddenly very hungry. We had been on the road for about 3 hours, so it made sense. The problem was that we were in the middle of nowhere. Not a decent thing to eat in sight and there probably wasn't going to be for a while. We didn't want fast food but the choices were really slim. Suddenly in the horizon we saw what looked like a tiny wooden shack. As we got closer, it was indeed a small wooden shack but luckily for us, it was a place to eat that wasn't fast food…. Well, you know what I mean. As we looked over the menu there were all the standards you would expect from any diner along anywhere USA. We all decided to split a huge sandwich and a side order of onion rings. Nothing out of the ordinary right? Wrong! When I got a taste of those onion rings I was blown away. There was something classic yet different about them that I couldn't figure it out at the time. Ever since that time in the desert I started to play with different onion ring recipes and I think I finally got it right. I used to be intimidated by the thought of making onion rings. Its one of those things where once you make them, you never forget how and eventually they become easy to do. I now make them as appetizers while watching TV because they are easy for dipping. Also for almost every event I have at my house.Give them a go.They're super easy!

Ingredients

  • 3 large onions
  • 1 cup beer (I used lager)
  • 1 cup mineral water
  • 1 1/2 cups flour
  • 1/2 cup bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon chipotle pepper powder
  • 1/2 teaspoon garlic powder
  • 4 cups vegetable oil

Directions

    Cut onions into rings. Set to the side.

    In a bowl add in beer, mineral water, flour, bread crumbs, salt, chipotle powder, and garlic powder. Whisk together. Batter should be a little thicker than pancake batter.

    Pour vegetable oil in a small pot over a medium flame. Allow to get hot.

    Drop onions into batter.

    Then drop onions into hot oil and cook until golden brown.

    Remove from oil and place on a paper towel lined plate to drain.

    Serve with condiments of your choice. Enjoy!

    Omit the chipotle pepper powder if you prefer a non-spicy treat.
