Spaghetti with Garlic and Arugula

Who doesn’t like pasta? My favorite pasta dish pairs spaghetti with garlic, and now that arugula is in season, it goes perfectly in my favorite noodle recipe. In general, pasta is easy to prepare, and this meal in particular is ready in less than 20 minutes. Enjoy!

Ingredients

  • 4 cups hot water, salted
  • 1 package dry spaghetti noodles
  • 1 tablespoon olive oil
  • 1 garlic clove, chopped
  • 1 cup fresh arugula
  • Salt and pepper, to taste

Directions

    Add the 4 cups of salted water to a wide pot and bring to a boil over medium heat. Add the pasta. Cook for approximately 10 minutes, until noodles are al dente.

    Add the oil to a frying pan and parboil the garlic, adding the arugula and cooking the mix for 5 minutes.

    When the pasta is ready, drain and add to the frying pan with the garlic and greens. Combine all ingredients using tongs and season with salt and pepper, to taste.

    Serve immediately.

    You may use spinach in place of the arugula or substitute white pasta for whole-grain or gluten-free noodles.

    Garnish with Parmesan cheese and serve with garlic bread.
