Taco Pizza with Shrimp

Ingredients

  • 1/2 pound uncooked shrimp, peeled and tail removed
  • 1/2 teaspoon chili powder
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 1 cup from 1 can (16 oz) Old El Paso™ Black Bean Refried Beans
  • 2 cups Monterey jack cheese, grated
  • 2 cups romaine lettuce, chopped
  • 1 cup tomatoes, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 peeled and chopped avocado
  • 1/4 cup red onion, cut into small strips

Directions

    Add the chili powder to the shrimp. Sauté the shrimp in a nonstick pan for approximately 6 to 7 minutes or until the shrimp are pink.

    Preheat the oven to 400°F. Add cooking spray to cook a nonstick baking dish (15x10 or bigger). Unroll the dough in the baking dish, use your fingers to apply pressure to the dough starting from the center and moving out. Do this until you have filled the pan with the dough.

    Cover the dough with the refried beans, but leave 1 inch clean on the borders. Sprinkle Monterrey Jack cheese on top. Bake the pizza for about 15 minutes, or until the cheese has melted.

    Remove the tray from the oven and cover with shrimp, chopped lettuce, tomato, avocado, onion and cilantro. Serve with your favorite sauce.
