Although we use dark beans often in many of our dishes, I can never forget the wonderful texture and rich taste of white beans. This salad is a perfect way to showcase its flavor; just a few ingredients combined to create a delicious appetizer.

Ingredients

  • 2 large tomatoes
  • 8 slices of fresh mozzarella cheese
  • 1 can Progresso™ Cannellini beans
  • 2 cups arugula
  • 4 tablespoons olive oil
  • 2 tablespoons white vinegar
  • Salt and pepper to taste

Directions

    Cut the tomatoes into thick slices.
  • 2
    Place the tomatoes on a plate and top with the mozzarella cheese slices.
  • 3
    Add the white beans over the cheese, and then the arugula leaves.
  • 4
    In a separate bowl, mix the olive oil, vinegar, salt and pepper.

    Pour this dressing over your salad and serve immediately.

    You can substitute the fresh mozzarella for Burrata cheese.
