Chori-Monster Tacos

It’s probably safe to say that most people know how to make tacos. Tacos are originally from Mexico, but have become a worldwide favorite. There are many types made with flour tortillas or corn tortillas, hard, soft and even fried. They can be filled with anything you can imagine! At home we prepare them at least once a week. They’re great when we have different stews from the week, all we have to do is add the tortillas, taco sauce and dinner is ready. Tacos are also a great way to get your kids to eat their veggies, especially when presented in a fun way. This is exactly what I’m presenting you today: a simple, delicious and perfect dish for Halloween. Chorizo is my family’s favorites and Old El Paso™ taco shells were the perfect addition. To finish, I cut a piece of watermelon into ghost shapes and placed them over halved grapes so they could stand. This is a perfect family meal.

Ingredients

  • 1 box (4.6 oz) Old El Paso™ Crunchy Taco Shells (12 Count)

For the filling:

  • 2 tablespoons canola oil
  • 1/2 medium white onion, finely chopped
  • 1 package (9 oz) of chorizo
  • 1.7 oz longaniza sausage (optional)
  • 2 tomatoes, finely chopped
  • 2 cups refried beans
  • 6 leaves of iceberg lettuce, washed and chopped finely

For the sauce:

  • 10 green tomatillos, washed and halved
  • 2 Serrano peppers, washed and cut in half
  • 2 cups water
  • 30 stems of cilantro washed and drained
  • 1 teaspoon salt

For the decoration:

  • 1 green chili pepper, washed
  • 3 tomatoes, washed
  • 24 green olives, drained
  • Sour cream
  • 24 slices of cheddar cheese

Directions

    Heat the oil in a medium pan and sauté the onions until tender. Add the chorizo and the sausage and fry for 10 minutes. Add the tomato then lower the temperature to medium, cover and let cook for 15 minutes. Mix from time to time.

    Add the tomatoes, red pepper and water to a pot at high heat. Lower the temperature when it begins to boil and let simmer for 3 minutes. Turn off the stove and let sit for 5 minutes.

    In the meantime, cut the green peppers into 24 triangles to create the eyebrows (like in the picture) and 12 squares to make the nose. Make a circular incision in the center of each so that the olive can fit in each opening.

    Take each piece of cheddar cheese and create the monster’s hands. Set aside.

    When the sauce is ready, empty the tomatoes and green peppers (keep the water) into a blender. Add the cilantro and salt. Process until you have an even consistency. Add more water from the pot you reserved if necessary.

    Heat the refried beans and warm the tacos according to the instructions.

    Now you’re ready to prepare them. Take a taco shell and spread on the refried beans; add the lettuce, chorizo and more lettuce. Add green sauce to taste. Place on a long dish.

    Add the eyes (tomatoes with olives), the eyebrows (peppers) and hands (cheddar cheese). Add a bit of sour cream to the middle of the taco and add the green pepper. Finish with a bit of chorizo mixture to make the mouth. Repeat with each taco.

    Prepare the sauce a day in advance to save time.

    You can also prepare the chorizo a day in advance. This will save you more time since now you’ll only need to heat and prepare the tacos.

    You can use the chorizo you prefer (beef, pork and even soy).
