I'm sure most families have a few cans of tuna stacked in the pantry. But how many of us have canned salmon on hand? Canned salmon not only has the same nutritional value as its fresh counterpart, but it's also an economical and convenient alternative. Today, I'm going to show you a recipe that is super easy to follow to incorporate this canned goodie. My kids really like croquettes, whether they're made with tuna or potatoes. They can eat them with their hands and dip them in their favorite sauce. That's why I've added a new recipe to my collection: salmon croquettes. They're ready in about 45 minutes, and the price is unbeatable at about $6 from start to finish! I recommend doubling the recipe to serve four, since I can almost guarantee most will eat more than 4 or 5 in one sitting.

Ingredients

  • 2 (5-oz) cans drained, boneless salmon
  • 10 coriander sprigs, finely chopped
  • 6 parsley sprigs, finely chopped
  • 4 fresh thyme sprigs (only the leaves)
  • 3 green onions, finely chopped (use the whole onion, white and green parts)
  • 2 garlic cloves, finely chopped
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/2 cup Progresso™ Panko Crispy Bread Crumbs Italian Style
  • Non-stick cooking spray

Directions

    Preheat the oven to 350°F.

    In a glass bowl, stir together the salmon, coriander, parsley, thyme, green onion, garlic, eggs, salt and bread crumbs.

    Spray a baking sheet with non-stick cooking spray.

    Use your hands to form 2-inch long croquettes, one by one. Arrange them on the baking sheet.

    Spray the top of the croquettes with a layer of cooking spray and bake for 20 minutes.

    Remove from the oven and let rest a few minutes. Serve while hot with your favorite sauce and a salad.

    You can use dry herbs in place of purchasing fresh.

    To give this dish some kick, add 1-2 tablespoons of hot pepper sauce or 1 finely chopped jalapeño pepper to the salmon mix before forming the croquettes.
