Whole Wheat Waffles with Cider Syrup

Ingredients

Syrup

  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup apple cider
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or margarine

Waffles

  • 2 eggs
  • 2 cups whole wheat flour
  • 3 tablespoons canola oil
  • 1 3/4 cups fat-free (skim) milk
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons wheat germ

Directions

    In 2-quart saucepan, mix 1/2 cup sugar, the all-purpose flour, cinnamon and nutmeg. Stir in cider and lemon juice. Cook over medium-high heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in butter; cover to keep warm.

    Heat waffle iron that has 4 (4-inch) squares; brush with canola oil if necessary (or spray with cooking spray before heating). In medium bowl, beat eggs with wire whisk until fluffy. Beat in remaining waffle ingredients except wheat germ just until smooth.

    Pour about one-third of the batter (about 1 cup) from cup or pitcher onto center of hot waffle iron; spread batter slightly with heatproof spatula toward sides of waffle iron. Sprinkle with 2 tablespoons wheat germ. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.

    Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter. Serve waffles with syrup.
